This air fryer zucchini recipe is a quick and healthy way to enjoy zucchini. Crispy on the outside and tender on the inside, it’s the perfect side dish or snack.

- 2 medium zucchinis, sliced into rounds
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini with olive oil, garlic powder, onion powder, salt, pepper, and Italian seasoning. Toss until the zucchini is evenly coated.
- Arrange the zucchini slices in a single layer in the air fryer basket. Make sure they are not overlapping for even cooking.
- Air fry the zucchini for 8-10 minutes, shaking the basket halfway through to ensure even cooking, until they are golden brown and crispy.
- If using, sprinkle the grated Parmesan cheese over the zucchini during the last 2 minutes of cooking.
- Remove from the air fryer and serve immediately.
Notes
- You can add other seasonings or herbs according to your preference.
- For extra crunch, consider coating the zucchini slices in breadcrumbs before air frying.
