Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the mixed vegetables with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the vegetables are well coated.
  3. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  4. Cook for 10-15 minutes, shaking the basket halfway through cooking, until the vegetables are tender and crispy.
