Ingredients

- 2 cups of mixed vegetables (carrots, bell peppers, zucchini, broccoli)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the mixed vegetables with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the vegetables are well coated.
- Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 10-15 minutes, shaking the basket halfway through cooking, until the vegetables are tender and crispy.
- Remove from the air fryer and garnish with chopped parsley before serving.
