Description

Delicious and fluffy muffins made easily in an air fryer. Perfect for breakfast or a snack!


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup optional add-ins (chocolate chips, berries, etc.)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, vegetable oil, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in any optional add-ins.
  4. Preheat the air fryer to 320°F (160°C).
  5. Line muffin cups with paper liners or spray them with non-stick spray.
  6. Scoop the batter into the prepared muffin cups, filling them about ¾ full.
  7. Place the muffin cups in the air fryer basket, making sure they are not touching.
  8. Cook for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the muffins cool for a few minutes before removing them from the cups. Enjoy!

Notes

  • You can substitute whole wheat flour for half of the all-purpose flour for a healthier option.
  • Feel free to mix and match add-ins like nuts, dried fruits, or spices.
  • Store any leftover muffins in an airtight container for up to 3 days.
