Description
Delicious and fluffy muffins made easily in an air fryer. Perfect for breakfast or a snack!
Ingredients

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
- ⅓ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup optional add-ins (chocolate chips, berries, etc.)
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in any optional add-ins.
- Preheat the air fryer to 320°F (160°C).
- Line muffin cups with paper liners or spray them with non-stick spray.
- Scoop the batter into the prepared muffin cups, filling them about ¾ full.
- Place the muffin cups in the air fryer basket, making sure they are not touching.
- Cook for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes before removing them from the cups. Enjoy!
Notes
- You can substitute whole wheat flour for half of the all-purpose flour for a healthier option.
- Feel free to mix and match add-ins like nuts, dried fruits, or spices.
- Store any leftover muffins in an airtight container for up to 3 days.
