Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • Cooking spray or oil for spraying

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow dish, combine flour, salt, and pepper.
  3. In another dish, beat the eggs.
  4. In a third dish, combine shredded coconut and panko breadcrumbs.
  5. Dredge each shrimp in the flour mixture, shaking off excess.
  6. Dip the shrimp into the beaten eggs, then coat with the coconut and panko mixture, pressing gently to adhere.
  7. Place the coated shrimp in a single layer in the air fryer basket, making sure they do not touch.
  8. Spray the shrimp lightly with cooking spray or oil.
  9. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately with your favorite dipping sauce.
