- 1 pound large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- Cooking spray or oil for spraying
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine flour, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, combine shredded coconut and panko breadcrumbs.
- Dredge each shrimp in the flour mixture, shaking off excess.
- Dip the shrimp into the beaten eggs, then coat with the coconut and panko mixture, pressing gently to adhere.
- Place the coated shrimp in a single layer in the air fryer basket, making sure they do not touch.
- Spray the shrimp lightly with cooking spray or oil.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
