Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked sausage or bacon, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. In a skillet, cook the diced onions and bell peppers over medium heat until softened, about 3-4 minutes. Add the sausage or bacon and cook until heated through.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are set. Remove from heat and stir in the cheese.
  4. Lay out the tortillas on a flat surface. Spoon an equal amount of the egg mixture onto the center of each tortilla.
  5. Fold in the sides of the tortilla and roll it up tightly from the bottom. Repeat with remaining tortillas.
  6. Preheat the air fryer to 375°F (190°C). Lightly spray the burritos with cooking spray.
  7. Place the burritos in the air fryer basket, seam side down. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the air fryer and let cool for a few minutes before serving. Enjoy!
