- 6 corn tortillas
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a baking dish.
- Cut the tortillas into strips and layer them in the baking dish.
- In a bowl, whisk together the eggs, milk, salt, pepper, and cumin.
- Pour the egg mixture over the tortillas.
- Sprinkle the cheese, bell peppers, and onions on top.
- Bake for 30-35 minutes or until the eggs are set.
- Let it cool for a few minutes before serving.
