Ingredients

- 2 cups of quinoa
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- Let quinoa cool to room temperature.
- In a large bowl, combine quinoa, tomatoes, cucumber, bell pepper, and avocado.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss well.
- Serve immediately or chill before serving.

- Feel free to add your favorite protein like grilled chicken or shrimp.
