Quick and easy summer dinner meals.


Ingredients

  • 2 cups of quinoa
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of feta cheese
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and feta cheese.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Add cooked quinoa to the vegetable mixture and pour dressing over it.
  6. Toss everything together until well combined.
  7. Serve chilled or at room temperature.

  • This dish can be made a day ahead.
