Ingredients

- 2 cups of quinoa
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup of feta cheese
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and feta cheese.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add cooked quinoa to the vegetable mixture and pour dressing over it.
- Toss everything together until well combined.
- Serve chilled or at room temperature.
Notes
- This dish can be made a day ahead.
- Feel free to add grilled chicken or shrimp for protein.
- Customize with your favorite vegetables.
