Description
A refreshing summer dinner salad with grilled chicken and seasonal vegetables.
Ingredients

- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Remove chicken from grill and let rest for 5 minutes.
- Slice the grilled chicken into strips.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Add sliced chicken on top of the salad.
- Drizzle with balsamic vinaigrette and toss gently.
- Serve immediately.

- Use any seasonal vegetables you prefer.
- For a vegetarian option, replace chicken with grilled tofu.
