A creamy and delicious strawberry cheesecake that is perfect for any occasion. This recipe combines a buttery graham cracker crust with a rich cheesecake filling and fresh strawberries on top.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry glaze (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth. Gradually add in 1 cup sugar and vanilla extract, mixing until well combined.
  5. Add eggs one at a time, mixing well after each addition. Then, add the sour cream and mix until smooth.
  6. Pour the cheesecake filling over the prepared crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set and the edges are lightly golden.
  8. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  9. Remove from the oven and cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, top the cheesecake with sliced strawberries and drizzle with strawberry glaze if desired.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Make sure to let the cheesecake cool slowly in the oven to prevent cracks.
  • Feel free to substitute strawberries with other fruits, such as blueberries or raspberries.
