A creamy and delicious strawberry cheesecake that is perfect for any occasion. This recipe combines a buttery graham cracker crust with a rich cheesecake filling and fresh strawberries on top.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry glaze (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add in 1 cup sugar and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing well after each addition. Then, add the sour cream and mix until smooth.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and the edges are lightly golden.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove from the oven and cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
- Before serving, top the cheesecake with sliced strawberries and drizzle with strawberry glaze if desired.
Notes
- For a richer flavor, use full-fat cream cheese.
- Make sure to let the cheesecake cool slowly in the oven to prevent cracks.
- Feel free to substitute strawberries with other fruits, such as blueberries or raspberries.
