A festive dish to celebrate St. Patrick’s Day.
Ingredients

- 2 cups green cabbage, chopped
- 1 cup carrots, shredded
- 1 lb corned beef, sliced
- 1 cup potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the cabbage and carrots, sauté for 5 minutes.
- Add the potatoes, salt, and pepper, stir well.
- Place the corned beef on top of the vegetables.
- Pour the vegetable broth over the mixture.
- Cover and simmer for 30 minutes until the vegetables are tender.
Notes
- Serve with a slice of soda bread.
- Adjust seasoning to taste.
- Leftovers can be stored in the refrigerator for 3 days.
