Description

Ingredients

  • 2 cups green cabbage, chopped

  • 1 lb corned beef, sliced
  • 1 cup potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the cabbage and carrots, sauté for 5 minutes.
  3. Add the potatoes, salt, and pepper, stir well.
  4. Place the corned beef on top of the vegetables.
  5. Pour the vegetable broth over the mixture.
  6. Cover and simmer for 30 minutes until the vegetables are tender.
