- 1 tablespoon baking powder

- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- Optional: 1 cup dried fruit (like raisins or cranberries) or chocolate chips
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
- In a separate bowl, combine the heavy cream, egg, and vanilla extract. Add this mixture to the dry ingredients and stir until just combined. If using, fold in the dried fruit or chocolate chips.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.
- Cut the dough into wedges or use a round cutter to shape the scones. Place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until the scones are lightly golden on top.
- Remove from the oven and allow to cool slightly before serving with jam and cream.
Notes
- For a richer flavor, you can brush the tops of the scones with a little extra heavy cream before baking.
