  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1/2 cup pico de gallo
  • 1/4 cup sour cream or Greek yogurt
  • 1 lime, cut into wedges

Instructions

  1. Preheat the grill or a skillet over medium-high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Rub the mixture onto the salmon fillets.
  3. Place the salmon on the grill or skillet and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  4. While the salmon is cooking, warm the tortillas on the grill or in a separate skillet.
  5. Once cooked, remove the salmon from heat and flake it into large pieces.
