Description

A refreshing summer salad that combines juicy peaches, ripe tomatoes, and crusty bread, all tossed together with a light dressing.

Ingredients

Scale
  • 4 cups cubed crusty bread
  • 2 cups ripe tomatoes, chopped
  • 2 cups peaches, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the cubed bread on a baking sheet and toast in the oven for 10-15 minutes or until golden brown.
  3. In a large bowl, combine the chopped tomatoes, sliced peaches, red onion, and fresh basil.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Add the toasted bread to the tomato and peach mixture, then drizzle the dressing over the top.
  6. Toss gently to combine, ensuring the bread absorbs some of the juices.
  7. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
