This quick and easy One-Pan Spicy Chicken Fried Rice is packed with flavor and perfect for a weeknight dinner. Made with tender chicken, colorful vegetables, and a spicy sauce, it’s a complete meal cooked all in one pan!


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha (or to taste)
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (like peas, carrots, and bell peppers)
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 egg, beaten (optional)

Instructions

  1. In a large skillet or wok, heat vegetable oil over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add the garlic and ginger, and cook for another minute until fragrant.
  4. Stir in the mixed vegetables and cook for about 3 minutes until heated through.
  5. Push the chicken and vegetables to one side of the skillet. Pour the beaten egg (if using) into the other side, scrambling it until fully cooked.
  6. Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
  7. Pour the soy sauce and Sriracha over the rice and mix well to combine. Cook for another 2-3 minutes until everything is heated through.
  8. Garnish with sliced green onions before serving.

Notes

  • For extra heat, add more Sriracha or a pinch of red pepper flakes.
  • Feel free to substitute chicken with shrimp or tofu for a different protein.
  • This dish is best served immediately but can be stored in an airtight container in the fridge for up to 3 days.
