Description
This quick and easy One-Pan Spicy Chicken Fried Rice is packed with flavor and perfect for a weeknight dinner. Made with tender chicken, colorful vegetables, and a spicy sauce, it’s a complete meal cooked all in one pan!

- 2 cups cooked rice (preferably day-old)
- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon Sriracha (or to taste)
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables (like peas, carrots, and bell peppers)
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 egg, beaten (optional)
Instructions
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
- Add the garlic and ginger, and cook for another minute until fragrant.
- Stir in the mixed vegetables and cook for about 3 minutes until heated through.
- Push the chicken and vegetables to one side of the skillet. Pour the beaten egg (if using) into the other side, scrambling it until fully cooked.
- Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
- Pour the soy sauce and Sriracha over the rice and mix well to combine. Cook for another 2-3 minutes until everything is heated through.
- Garnish with sliced green onions before serving.
Notes
- For extra heat, add more Sriracha or a pinch of red pepper flakes.
- Feel free to substitute chicken with shrimp or tofu for a different protein.
- This dish is best served immediately but can be stored in an airtight container in the fridge for up to 3 days.
