One-Pan Spicy Chicken Fried Rice: 30-Minute Delight

A quick and easy one-pan recipe for delicious spicy chicken fried rice that is ready in under 30 minutes.


Ingredients

  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (or more to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 1 tablespoon fresh cilantro for garnish (optional)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add diced chicken and season with salt and pepper. Cook for about 5-7 minutes until chicken is cooked through.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the frozen mixed vegetables and cook until heated through.
  5. Add the cooked rice to the skillet, breaking up any clumps.
  6. Pour soy sauce, sriracha, and sesame oil over the rice. Stir well to combine all ingredients.
  7. Cook for another 3-5 minutes, stirring occasionally, until everything is heated through.
  8. Remove from heat and stir in sliced green onions.
  9. Serve hot, garnished with fresh cilantro if desired.

Notes

  • Feel free to adjust the level of spiciness by adding more or less sriracha.
  • You can substitute chicken with shrimp or tofu for a different protein option.
  • This recipe is great for using up leftover rice!
