A quick and easy one-pan recipe for delicious spicy chicken fried rice that is ready in under 30 minutes.

- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breast, diced
- 2 tablespoons vegetable oil
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (or more to taste)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 1 tablespoon fresh cilantro for garnish (optional)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add diced chicken and season with salt and pepper. Cook for about 5-7 minutes until chicken is cooked through.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the frozen mixed vegetables and cook until heated through.
- Add the cooked rice to the skillet, breaking up any clumps.
- Pour soy sauce, sriracha, and sesame oil over the rice. Stir well to combine all ingredients.
- Cook for another 3-5 minutes, stirring occasionally, until everything is heated through.
- Remove from heat and stir in sliced green onions.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- Feel free to adjust the level of spiciness by adding more or less sriracha.
- You can substitute chicken with shrimp or tofu for a different protein option.
- This recipe is great for using up leftover rice!
