Ingredients

  • 8 oz pasta of your choice (spaghetti, fettuccine, or penne)
  • 1 cup ricotta cheese
  • 1 lemon, zested and juiced
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a bowl, mix together the ricotta cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.
  5. Combine the cooked pasta with the spinach and garlic in the skillet. Add the ricotta mixture and reserved pasta water, stirring to combine until creamy.
  6. Serve immediately, topped with additional lemon zest and Parmesan cheese if desired.

Notes

  • Feel free to add cooked chicken or shrimp for extra protein.
  • You can substitute the spinach with kale or arugula if preferred.
  • For a spicier kick, add red pepper flakes while cooking the garlic.
