A light and creamy pasta dish featuring fresh spinach, garlic, and zesty lemon ricotta.
Ingredients

- 8 oz pasta of your choice (spaghetti, fettuccine, or penne)
- 1 cup ricotta cheese
- 1 lemon, zested and juiced
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, mix together the ricotta cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.
- Combine the cooked pasta with the spinach and garlic in the skillet. Add the ricotta mixture and reserved pasta water, stirring to combine until creamy.
- Serve immediately, topped with additional lemon zest and Parmesan cheese if desired.
Notes
- Feel free to add cooked chicken or shrimp for extra protein.
- You can substitute the spinach with kale or arugula if preferred.
- For a spicier kick, add red pepper flakes while cooking the garlic.
