Ingredients

- 1 cup cherry tomatoes
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1/2 cup hummus
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Wash and prepare all the vegetables.
- In a bowl, mix the cherry tomatoes, cucumber, and bell peppers.
- Add the olives and feta cheese to the vegetable mix.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the vegetable mix and toss gently.
- Serve with hummus on the side.
