Ingredients

- 6 ripe tomatoes, diced
- 1 cucumber, peeled and diced
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 3 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, bell pepper, red onion, and minced garlic.
- Add the tomato juice, olive oil, and red wine vinegar to the vegetable mixture.
- Season with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth, or leave it chunky for more texture, depending on your preference.
- Chill in the refrigerator for at least 2 hours to allow the flavors to meld.
- Serve cold, garnished with fresh basil or parsley.
