Ingredients

  • 1 bell pepper, diced

  • 3 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large bowl, combine the diced tomatoes, cucumber, bell pepper, red onion, and minced garlic.
  2. Add the tomato juice, olive oil, and red wine vinegar to the vegetable mixture.
  3. Season with salt and pepper to taste.
  4. Using an immersion blender, blend the soup until smooth, or leave it chunky for more texture, depending on your preference.
