- 6 large eggs
- 1/2 cup milk
- 1 cup diced vegetables (bell peppers, spinach, onions)
- 1 cup shredded cheese
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together eggs and milk.
- Add salt and pepper to the egg mixture.
- In an oven-safe skillet, heat olive oil over medium heat.
- Add diced vegetables and cook until softened.
- Pour egg mixture over the vegetables and cook for 2-3 minutes without stirring.
- Sprinkle cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes until set.
- Remove from oven, let it cool slightly, and slice to serve.
Notes
- Feel free to add cooked meats like bacon or sausage.
- Use any vegetables you have on hand.
- Store leftovers in the refrigerator for up to 3 days.
