Description

A simple and delicious eggplant parmesan recipe made in the air fryer.


Ingredients

  • 1 large eggplant, sliced
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice the eggplant and sprinkle with salt. Let it sit for 20 minutes, then pat dry.
  3. In a bowl, mix breadcrumbs, Italian seasoning, salt, and pepper.
  4. Dip each eggplant slice into the breadcrumb mixture.
  5. Place the breaded eggplant in the air fryer basket in a single layer.
  6. Cook for 10 minutes, flipping halfway through.
  7. Layer marinara sauce, mozzarella, and parmesan on top of the cooked eggplant slices.
  8. Cook for an additional 5 minutes until the cheese melts.
