A simple and delicious eggplant parmesan recipe made in the air fryer.
Ingredients

- 1 large eggplant, sliced
- 1 cup breadcrumbs
- 1 cup marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant and sprinkle with salt. Let it sit for 20 minutes, then pat dry.
- In a bowl, mix breadcrumbs, Italian seasoning, salt, and pepper.
- Dip each eggplant slice into the breadcrumb mixture.
- Place the breaded eggplant in the air fryer basket in a single layer.
- Cook for 10 minutes, flipping halfway through.
- Layer marinara sauce, mozzarella, and parmesan on top of the cooked eggplant slices.
- Cook for an additional 5 minutes until the cheese melts.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Adjust the seasoning to your taste.
- Serve with fresh basil for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
