  • 1 zucchini, sliced into 1/2-inch rounds
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  3. Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, soak wooden skewers in water for 10 minutes if using.
