- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into 1/2-inch rounds
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
- While the chicken is marinating, soak wooden skewers in water for 10 minutes if using.
- Thread the marinated chicken, bell pepper, zucchini, red onion, and cherry tomatoes onto the skewers, alternating ingredients.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and the veggies are tender.
- Remove from grill and serve immediately.
