Instructions

  1. In a large skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper. Mix well.
  4. Bring the mixture to a simmer and cook for about 10 minutes, allowing flavors to meld.
  5. If desired, top with shredded cheese, cover, and let melt for 5 minutes.
  6. Serve hot, garnished with fresh cilantro if desired.
