- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper. Mix well.
- Bring the mixture to a simmer and cook for about 10 minutes, allowing flavors to meld.
- If desired, top with shredded cheese, cover, and let melt for 5 minutes.
- Serve hot, garnished with fresh cilantro if desired.
