Ingredients

- 2 cups coleslaw mix
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- 4 ears of corn
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
Instructions
- In a bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper.
- Mix well and refrigerate for at least 30 minutes.
- Boil corn for 5-7 minutes until tender, then cool and cut kernels off the cob.
- In a large bowl, combine corn, cherry tomatoes, and cucumber.
- Serve coleslaw and corn salad chilled.
Notes
- You can add diced bell peppers for extra crunch.
- Make the coleslaw a day ahead for better flavor.
- Adjust seasoning according to your taste.
