These refreshing coconut popsicles are the perfect treat for hot summer days. Made with creamy coconut milk and a hint of sweetness, they are both delicious and easy to make.
Ingredients

- 2 cups coconut milk
- 1/2 cup sweetened condensed milk
- 1/4 cup shredded coconut
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- Pinch of salt
Instructions
- In a mixing bowl, combine coconut milk, sweetened condensed milk, shredded coconut, vanilla extract, lime juice, and a pinch of salt. Stir until well combined.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4-6 hours or until completely solid.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds until they loosen.

Notes
- Feel free to add fruit like pineapple or mango for a tropical twist.
