Ingredients

  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion and bell pepper, sauté until soft.
  4. Add spinach and cook until wilted.
  5. In a bowl, whisk eggs and season with salt and pepper.
  6. Mix in the sautéed vegetables and feta cheese.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 20-25 minutes or until set.
  9. Let cool, cut into squares, and store in containers.
