A creamy and flavorful orzo bake featuring Boursin cheese.
Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 8 oz Boursin cheese
- 1 cup spinach, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a pot, bring vegetable broth to a boil and add orzo. Cook for 8-10 minutes until al dente.
- In a large mixing bowl, combine cooked orzo, Boursin cheese, spinach, cherry tomatoes, and olive oil.
- Season with salt and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes until golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- Using whole grain orzo can make it healthier.
- Adjust the cheese quantities to taste.
