- 1 cup of beer (lager or ale recommended)
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
- In a large bowl, whisk together the beer, olive oil, minced garlic, brown sugar, soy sauce, Dijon mustard, smoked paprika, salt, and black pepper until well combined.
- Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover with plastic wrap and refrigerate for at least 2 hours, or up to 12 hours for best flavor.
- Preheat the grill or oven to medium-high heat (about 375°F).
- Remove the chicken thighs from the marinade, allowing excess to drip off. Discard the leftover marinade.
- If grilling, place the chicken thighs skin-side down on the grill. Cook for 6-8 minutes, then flip and cook for another 6-8 minutes, or until internal temperature reaches 165°F.
- If roasting, place the chicken thighs on a baking sheet and roast in the oven for 30-35 minutes, or until cooked through.
- Let the chicken rest for 5 minutes before serving. Garnish with fresh herbs.

- For a spicier version, add chili powder or hot sauce to the marinade.
